Drying biological products such as herbs is a challenging task. On the one hand the products must be prepared for long-term storage, to use them as teas, spices or for further converting. On the other hand the products must not be “stressed” by the temperature and duration of the drying process; taste, colour and biologically useful ingredients should be preserved.
